Copycat Chick-fil-a Nuggets

Copycat Chick-fil-a Nuggets:

·         chicken breast, cut into chunks

·         1 cup dill pickle juice (or pickled jalapeno juice)

·         ½ cup whole milk or heavy cream

·         1 cup flour

·         1 cup plain breadcrumbs

·         2 tbsp. powdered sugar

·         1 tbsp. garlic powder

·         2 tsp. salt

·         2 tsp. paprika

·         1 tsp. baking powder

·         1 tsp. black pepper

·         peanut oil* or vegetable oil, for frying (at least 1" deep)

*Peanut oil will really kick this off like the fast-food chain, but vegetable oil will work! Just expect a bit of a different flavour profile.

Place cut chicken in a large zip-close bag with the pickle juice & milk. Give a gentle squeeze around to coat all the chicken, then place in fridge & let sit for at least 30 minutes – 2 hours. Heat at least an inch deep of your oil to 350 degrees F.

Combine the flour, breadcrumbs, powdered sugar, garlic powder, paprika, salt & pepper in a bowl & mix well.

Drain the marinade from the chicken & discard. Dip each chicken piece into the breadcrumb mixture & coat completely. Carefully add the coated chicken into the hot oil, & cook in small batches, fry for 3-5 minutes & the chicken is a deep golden brown. Place chicken on a wire cooling rack to cool slightly, then repeat! Keep cooking until all chicken is done & enjoy!
