Green Goddess Salad Dip (Vegan, Gluten-Free & Keto Friendly)



Viral Green Goddess Salad Dip:  


Salad:

  • 1 head of green cabbage, chopped

  • 2-3 cucumbers, diced

  • 1/4 cup chives, chopped

  • 1 bunch green onions or scallions, chopped


Dressing:

  • 1 cup fresh basil leaves

  • 1 cup fresh spinach

  • 2 cloves garlic

  • 1 small shallot

  • 1 jalapeno, gutted

  • 2 lemons, juiced

  • 1/4 cup olive oil

  • 1/8 cup cashews, raw/unsalted

  • 1/8 cup walnuts, raw/unsalted

  • 1/3 cup nutritional yeast

  • 1 tsp. salt

  • 2 tbsp. rice vinegar

  • 1/2 bundle of chives

 

Wash & chop all the salad ingredients & mix into a large bowl. Add all the liquid salad dressing ingredients into a blender first, then the remaining ingredients & blend until a thick, but pourable, consistency. Pour the dressing into the bowl over the chopped salad. Mix well & enjoy with your favourite chips!
