Homemade Kit-Kats:
Wafers:
2 cups almond flour
1/2 cup coconut sugar or 1/4 cup white sugar, & 4 tbsp. brown sugar
1/4 cup coconut oil, melted
1/4 cup warm water
Pinch of salt
Chocolate Filling:
2 oz. semi-sweet chocolate
3 tbsp. nut butter
Chocolate Coating:
6 oz. dark chocolate
2 tbsp. coconut oil (1tbsp. if using sweetened chocolate)
**Pinch of flaky salt to finish, if desired
Preheat oven to 350F.
While oven preheats, mix together all wafer ingredients. Once mixed, place the dough between 2 sheets of parchment paper & roll it out. Slice into 3x1 pieces & remove excess dough from the sides.
Transfer the dough to a baking tray & bake until golden brown (~8-12 minutes). Once baked, set aside to cool & assemble your chocolate filling. Melt the chocolate & then stir in the sweetener & nut butter.
Once cooled, break apart wafer pieces & spread chocolate filling on 2 wafers, leaving 1 plain in the middle, sandwiched in between. Place wafer sandwiches in freezer until hardened.
Melt the chocolate & coconut oil together then stir in sweetener & coat the wafer sandwiches & sprinkle with flaky salt if desired.
To make the doubled Kit-Kat look, press two coated wafer stacks together to harden. Cool the sticks in the fridge until all chocolate has hardened, then enjoy!
