One Pot ‘Marry Me’ Tuscan Chicken Orzo



One Pot ‘Marry Me’ Tuscan Chicken Orzo:


·         chicken breasts or tenderloins, cubed

·         1/2 yellow onion, diced

·         3 garlic cloves, minced

·         1/4 cup sundried tomatoes, halved or julienne cut

·         2 tbsp. olive oil or sundried tomato oil, reserved

·         1 ¼ cup orzo

·         1 cup chicken broth

·         1 cup water

·         1/8 cup heavy cream

·         1/8 cup parmesan

·         2 tbsp. salt, pepper, paprika, garlic powder, onion powder, Italian seasoning, & cayenne

·         Fresh or dried basil, chiffonade

·         Optional: red pepper flakes


In a pan or skillet over medium heat, toast the sundried tomatoes with a bit of the oil until lightly charred & fragrant. Remove from skillet & set aside. In the sundried tomato oil, add in the cubed chicken & seasonings. Once almost cooked through, toss in the diced onions & cook down until soft. Add in the minced garlic & cook until fragrant (~30 seconds). Mix in the orzo, toasted sundried tomatoes, broth & water, then cover & let cook ~8 minutes. Give the mixture a stir, then cover again & cook until orzo is cooked through.


Once the orzo is soft & the broth/water has absorbed, turn off the heat & add in the heavy cream, basil & spinach. Toss the mixture together with parmesan until the spinach has wilted, serve & enjoy!
