One Pot Tomato Orzo:
1 cup orzo (I used a chickpea orzo for this one!)
1/4 cup heavy cream or coconut milk
1-2 tbsp chili oil
3/4 cup water
1/4 cup chicken broth
1-2 cups cherry tomatoes
3 garlic cloves (minced)
Half an onion (diced)
2 tbsp. olive oil
1/2 tsp. salt, pepper, red pepper flakes, Italian seasoning
1/4 cup parmesan
basil (chopped or chiffonade)
In a medium saucepan over medium-high heat, add olive oil & onion, cook until soft. Add in garlic & cook until fragrant. Add in cherry tomatoes, season with salt & pepper, mix, cover & let cook until tomatoes are soft (~10 minutes). Gently press tomatoes down & add in chili oil, stirring often.
Add in orzo & mix well for ~1 minute. Pour in water & broth while stirring & continue to mix until thickened. Add in coconut milk or heavy cream & seasonings & lower the heat. Simmer for 5-10 minutes, stirring often. Cover the pan & let cook for ~3 minutes (still stirring often).
Add in parmesan & mix until well incorporated. Top with more parmesan (as desired), fresh basil & serve!
