Caffè Mocha Banana Bread (Vegan)



Vegan Caffè Mocha Banana Bread: 


·         3 large or 4 medium bananas, ripe/overripe

·         4 tbsp. coconut oil, melted

·         4 tbsp. maple syrup

·         4 tbsp. ground flax

·         1 ¼ cups flour

·         1 tsp. baking soda

·         ¼ tsp. salt

·         1 tsp. cinnamon

·         FP

·         1/4 cup milk of choice

·         1/2 cup brewed coffee

·         Dark chocolate chips

 

Preheat oven to 350 degree F, & line a loaf tin with parchment paper. To a cup or bowl, add the ground flaxseed and brewed coffee, mix, & set aside to thicken for ~5 minutes.

In a medium to large bowl, mash bananas into a thick paste, then mix in all wet ingredients (except the milk). Once combined, add in all dry ingredients (except the cocoa) & mix well. Separate the mixture equally into two bowls, adding the cocoa powder & milk into one, & dark chocolate chips into the other. Layer each mixture by the spoonful into a lined loaf tin (give a swirl on top if you’d like!), & top with chocolate chips.

For a slightly gooey & soft bread, bake for 40-45 minutes. For a denser & cakier loaf, bake for 45-50 minutes. Once baked to desired consistency, let cool in the pan for ~20 minutes, then remove from tin & let cool for an additional ~20 minutes. Slice, serve, & enjoy!
